A perfect accompaniment for a summer dish
Ingredients
Heritage cherry tomatoes
Borlotti beans
Shallot
Garlic
Butter
Olive oil
White wine
Method
Take the borlotti beans out of the pod and place into salted water and simmer to soft
Slice the shallot and garlic then sweat in a little olive oil then add the drained borlotti beans
Add a glass of wine and reduce then add the tomatoes and cook till they just start to soften
Finish with a little butter and some fresh herbs
Taste for seasoning
