Recipe - Boxty Pancakes

A play on traditional pancakes from Ireland these Boxty pancakes are served with a trout caviar, chilli and green tabasco


Ingredients:


3 Maris piper potatoes

100g Mash potato

150ml whole milk

1 large egg

80g flour

Butter

Salt

Pepper


Trout caviar

Tabasco

Fresh chilli


Method:


Peel and grate the potatoes on the large side of a grater. Wrap in a clean tea towel and wring well to get rid of any excess liquid.


Transfer the grated potato to a mixing bowl, add the cold mashed potato and mix well.


Place the egg, milk, and flour in a separate bowl and whisk until smooth, then add to the potatoes and stir until incorporated then season well.


Heat a non-stick frying pan over a medium heat and add a little butter.


Spoon the batter into the pan and cook for about 4/5 minutes till golden, flip over and continue to cook for another 4/5 minutes then set aside in the oven to keep warm, repeat till all the batter is used up


Serve with the trout caviar dressed with a little Tabasco and fresh chilli
