Finger licking good (don't touch your face or mouth, obvs)
Brine chicken for 4 hours then wash and marinate in buttermilk for 24 hours
Dredge in flour mix (ingredients below) and fry till golden and cooked through

Brine (bring to a simmer and cool)
1 litre water
100g salt
For extra flavour add a tea bag of herbal tea
Dredge flour (mix together)
300g flour
100g corn flour
2 tsp's baking powder
1 tsp cayenne pepper
1 tsp five spice
1 tsp paprika
1 tsp garlic powder
1 tsp ground coriander
1 tsp black pepper
1 tsp salt
