Recipe - FlufferNutter

What is a fluffernutter?

A fluffernutter is a sandwich made with peanut butter and marshmallow fluff that is traditionally from New England. It’s not the fainthearted as it contains a lot of calories (and when I say a lot, I mean A LOT), but it’s so popular in the states it even has its own song.


Ingredients

For the banana bread

125g butter

175g brown sugar

2 eggs

280g plain flour

1 teaspoon of bicarbonate of soda.

Pinch of salt

125ml milk

3 banana’s

2 teaspoons of vanilla essence


For the sandwich

Peanut butter

Marshmallow fluff

Banana


Method

Make the banana bread first (this can be done the day before). In a mixing bowl cream the butter, sugar and vanilla essence together. Slowly add the eggs one by one. Add the bicarbonate of soda, salt and half of the flour. Slowly add the milk then add the rest of the flour. Mix in the Bananas till they’re all broken up (the mix may seem like it has split but this is normal). Bake at 170C for about 1 hour (test the cake is cooked by placing a knife to the centre and seeing if it comes out clean). To make the sandwich… Take 2 slices of banana bread; spread one side with peanut butter and the other with marshmallow fluff, add a few slices of banana and sandwich together. Eat as is or toast it under the grill for an extra crunch.
